If you find most standard 'dark' soy sauces too strong in flavour, or if you want to try a slightly different soy sauce, Higashimaru's soy sauce is where you should set your sights. This soy sauce has been made with more salt than dark soy sauces, allowing for a flavour that is both saltier and less fermented. This sauce goes particularly well with Kansai cuisine, or with foods requiring more subtle umami flavours.
